Minestrone
Ingredients

of Seitan or extra firm tofu

of sesame oil

of chickpeas

of bell pepper

tablespoon
of dried Italian seasoning

of cauliflower

cup
of cabbage shredded
1/2
cup
of carrot diced
1/2
cup
of fresh basil diced
1/2
cup
Free noodles
Teaspoon of rosemary powder

cup
of celery
1/2
cup
of fresh parsley chopped
1/2
cup
of Azuki beans

teaspoon
of white Miso

cups
water
Instructions
Sauté Seitan or Tofu until almost brown
Add Carrots
Add Celery
Add parsley
Add 8 cups of water
Bring to a boil for 4 minutes
Turn down flame as low as it will go for 2 min
Bring flame up to a simmer, not a boil
Add all other vegetables
Add miso
Simmer 1 minute
Shut off soup
Let it sit for 5 min
Bring flame up to a low simmer in order to serve piping hot!
