Ingredients
- 1/2 cup of Seitan or extra firm tofu
- 1 teaspoon of sesame oil
- 1/2 cup of chickpeas
- 1/2 cup of bell pepper
- 1 tablespoon of dried Italian seasoning
- 1/2 cup of cauliflower
- 1 cup of cabbage shredded
- 1/2 cup of carrot diced
- 1/2 cup of fresh basil diced
- 1/2 cup Free noodles
- Teaspoon of rosemary powder
- 1 cup of celery
- 1/2 cup of fresh parsley chopped
- 1/2 cup of Azuki beans
- 1 teaspoon of white Miso
- 8 cups water

Instructions
- Sauté Seitan or Tofu until almost brown
- Add Carrots
- Add Celery
- Add parsley
- Add 8 cups of water
- Bring to a boil for 4 minutes
- Turn down flame as low as it will go for 2 min
- Bring flame up to a simmer, not a boil
- Add all other vegetables
- Add miso
- Simmer 1 minute
- Shut off soup
- Let it sit for 5 min
- Bring flame up to a low simmer in order to serve piping hot!
